Job Description

  • Provides assistance to the Executive Chef at any given time and in the event of his/her absence is able to take control and run the kitchen
  • Maintains the quality of the hotel’s food & beverage services at all times
  • Disciplines all kitchen team members and follows hotel policy and procedures in all employee related matters.
  • Abides by all rules, regulations, policies and procedures of the Hotel
  • Ensures that all employees operate according to standard policies and procedures, hotel rules and regulations
  • Ensures that all employees report for duty in each outlet with correct uniform and name tag
  • Liaises with purchasing and receiving staff to monitor quality, price of all food ordered and received
  • Supervises and monitors consistency of food standards in each restaurant, takes corrective actions when required, with particular attention to: dish presentation/garnish, accompaniment, quality of presentation and taste,
  • Responsible for inter-departmental communications
  • Performs monthly inventories of food and operating equipment in his/her department
  • Conducts spot-checks at regular intervals
  • Assists outlet managers in maintaining high quality operation in service and cleanliness
  • Monitors and controls all operating kitchen equipment and utensils. Ensures operating equipment is kept in good working order.

Position Requirements

  • University degree or similar qualification in Hotel Management or related field
  • 3 years’ experience as a Sous Chef / 5 years relevant experience as a cook
  • Excellent knowledge of HACCP and Health & Safety standards
  • Excellent knowledge and implementation of employees H&S procedures
  • Very good command of spoken English
